Baked pork with coffee sauce
(10 to 12 portions)
Ingredients
3 pounds of pork
1 grated onion
1 tablespoon of black sauce
1 teaspoon oregano
2 tablespoons of oil
2 tablespoons panela
1 beer
1 tablespoon of instant coffee
Salt to taste
Marinate the meat well with the onion mixture, salt, black sauce and oregano. Marinate for at least three hours.
In a heavy bottom pot or pressure cooker heat the oil, brown the meat on all sides, add a beer and the powdered or grated panela. Cover and cook over medium heat for 1 ½ to 2 hours until tender. Remove the meat and let it rest for a few minutes.
Pour the cooking juices with the coffee in a bowl. Cut the meat in very thin slices and bathe them with sauce to serve.
