The CARAMANTA COFFEE is harvested by hand and only ripe beans are selected that go through a beneficiation process which consists of pulping, fermenting (a fully controlled process that lasts between 15 and 18 hours depending on the client's need) and then washing this coffee it is dried in the sun in canopies and finally passes to the manual threshing and classification process.
